These days, some of us have a little more time to experiment in the kitchen so I wanted to share 2 of my favourite (QUICK and EASY) dessert recipes with you!
It was my sister that gave me the idea for the Oreo Tiramisu as I love those (vegan-did you know that?) sweet treats so much! The Zucchini chocolate cake is a healthy version of a traditional chocolate cake, that a friend of mine introduced me to! It is so yummy and fluffy that I’m sure you’ll love it as much as we do! 😊
Oreo Tiramisu
4 people, 20 minutes preparation time
What you need:
- 8 Oreos
- 6 tbsp espresso
- 230ml of Mascarpone
- 3 eggs,
- 4tbsp of Sugar

It’s super easy:
- Crush the Oreos in a food processor (aka smoothie maker)
- Separate the eggs and mix the egg yolks with the sugar until creamy
Beat the egg whites with a mixer until swift - Put the Mascarpone in a large bowl and carefully fold the egg whites in.
- Add this mix to the egg yolk & sugar mix.
All there’s left to do is to layer everything in a form or in small glasses – the choice is yours! I always start with the cream! Put the finised tiramisu for minimun an hour into the fridge and enjoy! Before serving I like to use some cacao to sprinkle on top!
Zucchini chocolate cake
6 people, 10 minutes preparation time, 20 minutes baking time
Making this cake is even more easy and quick than the tiramisu!😀
What you need:
- 2 zucchinis
- 200gr black chocolate
- 3 eggs


- Preheat the oven to 180°C
- Peel and grate the zucchini
- Melt the chocolate in double boiler
- Take a large bowl, add & mix the eggs. Add the grated zucchini and the melted chocolate. Mix it up and pour it into a baking form.
- Bake it for 20 minutes at 180°C and just like that, it’s done!!
PS It’s normal that the cake doesn’t rise. 🙂
